Leek, Tuna & Sweet Potato Pie
Leek, Tuna & Sweet Potato Pie
Ingredients
(Serves 4)
1 sweet potato, pre-roasted at 200°C for
60-75 minutes
1 tin (185g) tuna with chilli in oil
1 leek, finely sliced
½ leek, finely sliced diagonally for decoration
50-100g tasty cheese, grated
10 Spanish pitted black olives, sliced
300ml thickened cream
Freshly ground pepper
Method
Splash a little of the tuna oil into an ovenproof pan and heat. Add the tuna, olives and finely sliced leek and cook until the leeks are softened.
Stir in the cream and simmer for 5-8 minutes. Turn off the heat.
Peel and slice the roasted sweet potato and layer over the top of the tuna mixture in the pan.
Layer the diagonally sliced leeks over the top in a circular pattern and sprinkle with as much tasty cheese as you like.
Freshly grind pepper over the top and slide under a hot grill for 4-5 minutes.
