Marinated Seafood Skewers
Marinated Seafood Skewers

Ingredients
* 350 g Ling Fillets, cut into 2.5cm pieces
* 16 Sea Scallops, washed and trimmed
* 1 COLES* Cherry Tomatoes, washed
* 16 Button Mushrooms
* 1 Lebanese Cucumber, sliced
* 1 red capsicum, seeds removed and cut into 2.5cm pieces
* 1 bunch Rocket Leaves, washed and trimmed
* 1/4 cup KRAFT* Squeezable Tangy Seafood Dressing
* 8 Bamboo Skewers
* 1/2 cup Satay Marinade
Cooking method
1. Soak bamboo skewers in warm water for 30 minutes.
2. Thread mushrooms, fish, scallops and capsicum alternately onto skewers. Place skewers in a shallow dish. Pour over marinade, turning to coat well. Marinate in the refrigerator, covered for at least 30 minutes.
3. Heat a BBQ plate or char-grill. Cook seafood skewers for 8 to 9 minutes turning and basting frequently until cooked.
4. To prepare salad: Combine rocket leaves, cherry tomatoes and cucumber in a large serving bowl. Pour over dressing and toss to combine.
5. Serve skewers immediately with salad.
